Journal of Food Science and Biotechnology
Abstract
Conventional grain storage methods have a variety of drawbacks.Electron beam irradiation,as an emerging non-thermal processing technology,has attracted attention due to its high efficiency,environmental friendliness,and minimal impact on grain quality.The author elaborates on the principles of electron beam irradiation and its applications in the food industry,reviews its effects on harmful organisms,physicochemical properties,and sensory quality of grains during storage,and makes an outlook on its future application prospects,with the expectation of promoting the application and popularization of electron beam irradiation in food storage.
