Aims & Scope
Journal of Food Science and Biotechnology is a peer-reviewed journal that committed to providing a communication platform for recent developments in the interdisciplinary field of food and biotechnology-related research. The journal accepts both fundamental and applied research with particular attention to 4 fields:
- Food science and engineering
- Light industry biotechnology and fermentation engineering
- Food safety detection and control
- Food nutrition and health
Topics featured in the journal include but are not limited to:
- Biotechnology, biochemistry, nutrition and microbiology of food, involves physiological and biological properties of foods, new theories, new methods and new food field technology, bioactive constituents, nutritional, and microbiological aspects, etc.
- Food quality and food safety, involves food analysis, food sensory and flavor evaluation, mechanism of functional foods and ingredients, fresh-keeping and delivery of nutraceuticals and functional food additives
- Food immunology, foodomics, food enzymology, involves genomics, proteomics, metabolomics, nutrigenomics and chemogenomics of foods and their interactions with humans
- Food processing, packaging, postharvest physiology, involves novel technology, biomaterials for food-related systems such as food packaging, food storage and preservation, etc.
- Enhancing human or animal health and wellness with novel or supplemented foods, especially for chronic diseases; evaluating nutritional endpoints versus food composition
- Evaluation and management of risks including chemical, microbiological, and molecular biology issues
- Food structure and physical properties of raw materials and processed foods, as well as insights into process engineering; biomass and bioenergy
The following topics will not be considered for publication in the journal:
- Non-medicinal and food homologous Chinese medicine, cooking techniques, tobacco,pure medicine, pharmacy, and mathematical derivation
- Functional and animal experiments performed on complex extracts (substances) without specific functional components
- Related patent pending, reluctant to open compositions of experimental materials
- Survey report, market analysis, consumer behavior analysis
- Content of education reform
